we’re seeing a response for both application and user restricted endpoints,

We’ve checked the api keys and secrets and they seem to be correct.

Had a look at this in Splunk in our e-RS logs, but found no no matching events for that correlation ID/error in those streams.
The error you shared (messaging.adaptors.http.flow.ApplicationNotFound) looks to be raised in the APIM/messaging gateway layer rather than ERS app-layer logs.
So as Tony says, at the moment this looks upstream of ERS, likely routing/app-product mapping in DEP rather than key or secret format at your side. We will see what the delivery team come back with.
